Have you got a Recipe for an Orange Fruit Cake

A good old fashioned fruit cake is a handy cake to have in the cake tin, ready to serve a slice when an unexpected guest turns up or you just fancy a piece of cake.

This particular recipe combines the zest and juice of an orange with a regular fruit cake and is such a simple but tasty recipe, it uses the easy rubbed in method of cake making and is so quick to make and virtually impossible to get wrong.

It is an ideal recipe for novice cooks because it is so easy to make.

It also has a good sticky, sweet orange glaze which just makes it that little different.

The cake also stores really well and it does in fact taste all the better for keeping a couple of days.

The ingredients are basic ones that most home cooks have in their store cupboard.

Orange Fruitcake

200g SR flour

1 teaspoon cinnamon

100g butter or hard margarine

100g caster sugar

175g seedless sultanas

2 eggs

Grated rind of 1 orange

Juice of 1 orange

Juice of 1 orange

50g icing sugar

Preheat oven to gas mark 4, 350f, 180c. Grease and line a 1lb loaf tin. Sieve together the flour and cinnamon. Rub in the butter or margarine. Stir in the sugar, orange peel and sultanas. Beat together the eggs and orange juice and add to the flour mixture, mixing very well. Pour mixture into the prepared tin and bake for about 50 minutes when it will be firm to touch. Cool cake and when cool make the orange glaze. Heat the orange juice and dissolve the icing sugar in it.

10.   Beat until smooth and pour over the cooled cake.

To store the cake keeping an airtight plastic box or cake tin, it will store well – if you can manage to stop the family from eating it all.
